GRUB ON-THE-GO

 
I've put my Paleo practice to the test
quite a few times already at multiple restaurants.
I'm sure most of you have either heard of
or visited these chains before : ) 
 
My experience was a lot easier than I had presumed!
 
When looking at the menu (BEFORE HAND: Always look at the menu before you decide/arrive to prepare yourself and have options already laid out), I knew I would not be able to order any type of "wrap" "burrito/taco" "crepe" "pancake" "BBQ" ...you get the point. My acquired plan of action became looking at the "ENTREE PLATE" sections along with side options and possible substitutes.

Honey-Soy Salmon, Cauliflower Rice and Cilantro-Mango Salsa!

aghhh, I totally stink at keeping up with my blog, school, internship, 
job, and all the craziness of life.

BUT, for now, I am back and I would absolutely LOVE
 to share this recipe and little video snippet with you )

Honey-Soy Salmon
Cauliflower Rice 
&
Cilantro-Mango Salsa


Ingredients

Salmon Glaze
Honey
Soy
Olive Oil
Lime Juice

Cauliflower Rice
1 head of cauliflower
Coconut Oil
Cilantro
Lime juice
Salt & pepper to taste

Cilantro Mango Salsa
Mango chunks
Cilantro
Lime Juice
Garlic
Garlic

Directions
Salmon
1. Marinate salmon with glaze and place
in a plastic bag for an hour

2. Grill salmon for 5 to7 minutes
 [I used a George Foreman]

Salsa
1. Mix all ingredients for salsa into a bowl 
and let chill in refrigerator until the rest of 
dinner is prepared.

Cauliflower Rice 
1. place cauliflower into food process 
and process until rice texture is formed

2. Coat medium sized skillet with coconut oil

3. In a thin layer, let cauliflower cook in skillet
until golden brown

4. Add cilantro and lime juice once heat is off



ALSO, as a side I had an 
Apple Swiss Salad

ingredients
Apple
 Lettuce
 and Balsamic Vinegar

Mexican Spring Roll



 Had a taste for something with salsa and beans…. 
anddd the Mexican Spring Roll was created!

Whatcha need, what whatchaaa need!?


Ingredients:
1.5oz Chicken
1/8c Salsa
1/8c Black beans
1/8c Plain Yogurt (used as sour cream replacement)
1/2 Avocado
1 Spring Roll Wrapper

How to get shredded chicken: 
1. Boil 1 chicken breast
2. Once cooked all the way through, transfer to cutting board
3. Use a fork to shred chicken 


Directions
So there's not much to it.
1. Get the ingredients you'd like to place in your spring roll
2. Drench the spring roll wrapper in water, then transfer wrapper to rolling surface
3. Place ingredients on paper, and roll er' up!

No Time To Workout

False. 

Have No Fear.. the INTERNET is here! yaayyy *audience claps*

I HATEEEE when people say they don’t have time to work out.
…..Yes you do. Use your head and be smart about it.

YouTube, Google, Instagram.. God’s gifts to earth. Look up cardio videos on YouTube, look up workouts on Google, get inspiring workouts from other fit freaks like us on Instagram. THERE’S A TON, trust me.

Today I had an hour to work out. Why waste time by driving to the gym? By the time I get there, I’d have 30 minutes to workout..feeling rushed and unsatisfied are the absolute worst workouts to have. 

On days like these, my living room IS my gym…

Yes that is my laptop I’m struggling to see. But whatever gets the job done! 
Here are the four workouts I completed:

Those workouts were NO JOKE! 
 I got just as good a workout as I would have, had I gone to the gym.
