Single Serving Chocolate Protein Cake

Single Serving
Chocolate Protein Cake
( NO OVEN REQUIRED !! )


INGREDIENTS:
1 tbsp Protein
3 tbsp Unsweetened Cocoa powder
1/2 tsp Baking Powder
1 tbsp Stevia
2 tbsp Unsweetend Apple Sauce
4 tbsp Unsweetened Almond Milk

DIRECTIONS:
Mix ALLLL ingredients together in a bowl
Microwave 60 to 90 seconds

APPLE PUMPKIN MUFFINS & Baking Substitutes

APPLE PUMPKIN 
MUFFINS


(Not all are shown in this picture! ^^ )

INGREDIENTS
1 Cup Canned Pumpkin
1/3C Unsweeted Applesauce
1 diced apple
1/2C Plain yogurt
3 egg whites
1C Oats
3/4C Almond Flour
1/4C Vanilla Protein Powder
1C Splenda
1tsp Baking Sode
1/4 tsp salt
1.5tsp Cinnamon
1/2tsp Pumpkin Spice

DIRECTIONS
1. Preheat oven to 350 degrees
2. Combine all ingredients into processor 


3. Pour mixture into tins
4. Bake for 15-20 minutes


5. Allow to cool
6. SERVE! 


7. Surprise and IMPRESS your roommates :)

PB2 COOKIES

PB2 COOKIES
+ an extra clip of my roommates reactions !


 INGREDIENTS


1/2 Cup Oat Flour
1/2 Cup PB2 (or Chocolate PB2)
1/4 Cup Unsweetened Applesauce
1/3 Cup Vanilla Protein Powder
1/2tsp baking soda
non-stick spray

DIRECTIONS
1. Preheat oven to 350
2. dry ingredients into zee bowl
3. mix egg & applesauce
4. combine dry and wet ingredients
5. spray baking sheet & shape to form cookies
6. Bake for 8-10 minutes

Grandma's Eclair Cake



I'm not sure if it's ONLY my Grandma's recipe so I'm not going
 to make a little claim to fame…
 but it is delicious and I had to re-make it for myself!


Simple little ingredient list; as healthy as I could get it :)
1C Unsweetened Almond Milk (use more if needed)
2 Packets Fat Free Vanilla Pudding Mix
1/2 Container of Fat Free Cool Whip
Reduced Fat Graham Crackers
Dark Chocolate Chip Morsels
Coconut Oil

Directions
1. Combine milk and pudding mix
2. Stir 1/2 container of cool whip into pudding mixture
3. Line dish with layer of graham crackers
4. Top with Pudding mixture
5. Line with another layer of graham crackers
6. Followed by a layer of Pudding Mixture
7. And a final layer of Graham crackers
8. Boil water in a pot on the stove
9. Place a heat-resistant bowl on top of the pot of boiling water
10. Heat coconut oil and chocolate chips in heat-resisitant bowl
11. Stir until completely melted 
12. Add chocolate on top of graham cracker layer 
13. Freeze for at least two layers; until graham crackers soften

Chocolate Fudge & Midnight Munchies

I've had a fudge recipe I've been dying to make, so tonight was THE night! 

Above are the only ingredients you need!
- 1 Ripe Banana
- 1/4 cup Coconut Oil
- 1/2 tsp Cinnamon
-1 tsp Vanilla Extract
- 1/4 cup Cocoa powder

Mix all of these ingredients together and place in a bendable container.
I used this plastic tray used to make jello jelly beans.

Freeze mixture for several hours until it reaches fudge form.


LATE NIGHT HUNGER?
I am not opposed at all. I ALWAYS get hungry at night..who knows why.
Sometimes I go straight to bed for this reason because I know it's out of pure boredom. 

BUT
If you're going to eat something, be somewhat smart about it
Today I was craving frozen yogurt ALL DAY! So when I got home, in order to get rid of this craving, I constructed this tastyyy dessert. 


Frozen Cool Whip is SUCH a good substitute for ice cream (not the healthiest..but the most convincing). The flavor, temperature, and consistency makes you actually feel like you're eating ice cream. I topped it with blueberries, strawberries, and 1/2 tablespoon of homemade almond butter. 

**Although it's usually best to choose a snack that is high in protein that will fill you up fast
Example: cottage cheese, almonds, avocado, reduced fat cheese, etc. 

HOW TO PREVENT HUNGER AT NIGHT
1. Eat Small meals Frequently throughout the day
2. Increase fiber in your diet
3. Choose high-protein foods
4. Establish meal times and patterns
5. Know the difference between emotional/physical hunger vs. boredom
6. Eat dinner later
7. Stay busy
